Uninterrupted Food Service During a Major Renovation
Customer Need
The historic Crowne Plaza Fredericton – Lord Beaverbrook Hotel required a temporary commercial kitchen while its primary kitchen underwent a major renovation and modernization.
Opened in 1948, the property is one of Fredericton’s most recognized hotels and is also home to Maxwell’s Steak & Seafood. Closing or significantly reducing food service during construction was not a practical option. The hotel needed to continue serving guests, restaurant patrons, and special events while maintaining the quality and consistency expected from an established hospitality destination.
The temporary facility needed to provide dependable cooking, preparation, refrigeration, and storage capacity within a constrained site—and remain fully operational through the demanding conditions of a New Brunswick winter.
Solution
Mobile Kitchens Canada supplied a fully equipped 44' mobile kitchen trailer to serve as the hotel’s temporary food production centre throughout the renovation.
Because of the site layout and the location of the existing kitchen, conventional trailer placement was not possible. The mobile kitchen was carefully lifted by crane and positioned on-site during extreme winter conditions, with temperatures approaching –40°C.
Mobile Kitchens Canada coordinated the delivery, crane placement, installation, utility connections, commissioning, and operational testing. Hotel staff also received orientation and ongoing support to help ensure a smooth transition into the temporary facility.
The completed kitchen provided the commercial cooking, preparation, refrigeration, and cold-storage capabilities required to maintain the hotel’s food service operations throughout construction.
The Result
The temporary mobile kitchen allowed Crowne Plaza Fredericton to continue serving hotel guests, Maxwell’s Steak & Seafood patrons, and special-event attendees while its permanent kitchen was transformed.
Despite a constrained installation area and exceptionally cold winter conditions, the facility was successfully positioned, commissioned, and maintained throughout the project. The hotel preserved continuity of service without compromising the standards expected by its guests and restaurant customers.
